Elephants Tomato Orange Soup recipe adapted from the blog of Elephants Delicatessen Ingredients. 1/4 cup clarified butter or coconut oil; 1/2 medium onion, diced; 2 (14 1/2 ounce) cans diced tomatoes; 1 teaspoon salt; 1/2 teaspoon cracked black pepper; 1/4 teaspoon baking soda;

In a saucepan melt butter, add onion and saute until translucent. Add tomatoes, salt, pepper, baking soda and thyme. Return to saucepan and stir in orange juice.

The inspiration for the soup comes from my favorite deli in Portland Elephants Deli and Uproot From Oregon's blog. I was reading Uproot from Oregon when she mentioned loving Elephants tomato orange soup. I haven't had the soup in years, but it is one of my all time favorites. The combination of tomatoes and orange is a match made in heaven.
