Growing up Seventh-Day Adventist, I didn't eat any meat (though some SDA's do eat fish, chicken and lamb). Since I didn't eat meat, I had to get protein in some way, shape or form.. Many people call it Special K Loaf or Cottage Cheese Loaf. It's great for last minute dinner plans and is a crowd-pleaser, despite the sort of strange.

4 cups of small curd cottage cheese. 4 cups corn flakes. 1 cup walnuts, chopped. 1 1/2 T. McKays Beef Seasoning (omit if using Lipton Onion Soup mix) Preheat oven to 350 degrees. Combine all ingredients in a large bowl and mix well. Place in a lightly greased, 11 X 9 inch casserole dish and bake for one hour.

Preheat the oven to 400 degrees. Mix together the boullion and hot water until bouillon is dissolved. Pour 5 cups Special K Cereal in a large mixing bowl. Pour the half and half, and water with boullion over top of cereal. Stir to combine. Let cereal sit and soak in liquid for 10 minutes. Step 2.

Preheat oven to 350 degrees. In a large bowl, mix together cottage cheese, oil, milk and beaten eggs. Next, add broth seasoning and onion flakes. Next, roughly grind pecan pieces in a blender or food processor. Add the pecan meal to the wet ingredients and mix until incorporated thoroughly.

Preheat oven to 350 degrees. Spray 9 x 13 pan with non-stick spray and set aside. Beat eggs in a large bowl. Saute diced onion in butter until onions are translucent. In the meantime add cottage cheese, Special K cereal, Bragg's, pecan meal, and evaporated milk to the beaten eggs. Add vegetarian beef seasoning if desired.
