Chermoula Cook (almost) Anything at Least Once

Chermoula is a Moroccan herb sauce, and while roasted red peppers aren't a traditional ingredient - I love the flavor and body you get from adding them to the sauce. It's smoky and sweet from the peppers & paprika, and the lemon juice & fresh herbs add a bright zippiness.

Picture chermoula as being somewhat similar in nature to chimichurri, the popular Argentinian herb sauce. Both have a base of olive oil and fresh herbs (commonly parsley and cilantro), and are flavored with garlic and red pepper flakes. There are some differences between chimichurri and chermoula, however.

Marinate the kangaroo meat with red chermoula; season with salt if necessary (there is salt in the red charmoula). Keep for at least 4 hours or longer. Place garlic, cilantro, parsley, paprika, cumin, cayenne, salt, and pepper in a food processor, and pulse until coarsely chopped. Add olive oil and lime juice, and process until a coarse paste forms. Add 1-2 tablespoons of water, as needed, to thin to a thick sauce consistency. Transfer to a jar and store in refrigerator until ready to use.

Basic chermoula usually combines fresh herbs, several spices, and an acidic ingredient. In its extended version it will include preserved lemons as well. The herbs commonly used are fresh coriander (cilantro) and parsley. The ratio of cilantro to parsley varies anywhere from 4:1 to 4:3 depending on the families and the regions.

Pour in the chopped tomatoes, drained chickpeas and a cup of water. Add 2 tablespoons of the red chermoula and some salt to taste, if required. Cover the pan and allow to cook for 10 mins. Step 2. Place the garlic and salt in a mortar and puree. Add a small handful of the chopped herbs, and gently but firmly grind until the herbs begin to dissolve. Add another handful. When all of the herbs have been mashed, work in the spices, ⅓ cup olive oil and lemon juice. Taste and adjust seasoning.

Blend or process briefly, until ingredients are all incorporated together, but small pieces of herbs are still visible.
