Occasionally Homemade Holiday Macarons

You can make macarons up to even 2 months in advance, depending on the filling. Wet fillings like jam or curd may make the macarons soggy faster. In the fridge macarons will last about 4-5 days (some people leave even up to 7 days or a bit longer), and in the freezer for about 1 to 2 months. Always keep them in an air tight container.

Combine the sugar with the flour, milk, and mincemeat in a medium saucepan over medium-high heat. Stir with a whisk until combined. Bring to a boil and then simmer until thickened, about 7 to 10 minutes. Cool the mixture to room temperature and then put in the refrigerator for at least an hour to cool completely.

Place egg whites, granulated sugar, and cream of tartar into a large mixing bowl, and begin beating with a whisk attachment using either a handheld mixer or a stand mixer for 2 minutes on a medium low speed (Kitchen Aid Speed 4). Turn up the mixer to a medium speed (Kitchen Aid Speed 6) and beat for an additional 2 minutes.

Remove tray and let macarons cool completely; repeat with remaining trays. Once macarons have cooled completely, remove from parchment.
