Place the first eight ingredients (through salt) in a 4- to 6-qt. electric or stove-top pressure cooker. Lock lid in place. Set electric cooker on high pressure to cook 15 minutes. And, it has almost none of the standard ingredients you find in Mexican-style nachos. You could also skip all the greens and chips and just cover your gyro meat with the harissa cheese sauce.

Use a vegan Greek yogurt or vegan Skyr style yogurt. Regular vegan yogurt is a bit too thin for the tzatziki.
