Clean food chopper. Chop jalapeño and place in food chopper for 15 seconds, remove 1/4 cup. Set food processor aside. Add minced onion and jalapeño to bowl and stir with spatula. Add minced cilantro to bowl and mix with spatula. Add lemon juice and blend all ingredients using blender. Blend until guacamole is smooth 1-2 minutes.
