PA Dutch Chicken Pot Pie (Bot Boi). According to a couple links here and there (and Wikipedia) it derives from the older Germanic word "bot(t) boi" which references a type of soup using a protein, starch(es), vegetables, and a vegetable/meat stock. And like so many words, it's become a more recognizable phrase "Pot Pie"..

Bring the mixture to a rolling boil, then add the noodles in one at a time- to prevent sticking. Reduce the mixture to a simmer, and let the noodles cook for 25 minutes, or until tender. 1-2 tsp dried parsley. Remove chicken to a plate to cool and remove bay leaf (discard bay leaf). Use a wire mesh strainer to pull any bits left inside of the pot or pieces of bay leaf. In PA Dutch, the meal is called bott boi, a phrase that morphed, over time, into "pot pie.". Mix till soft ball forms. Roll out on a floured table. Cut in to 2" squares. Allow to dry for several hours. Add pot pie noodles, salt and pepper to taste and cook till desired texture. (al dente). Serve over mashed potatoes. This recipe is my great grandmother's. An authentic Pennsylvania Dutch recipe. It is not a stew and not covered with crust.

In a 6 quart pot, simmer the chicken and 1/2 of the celery in 2 quarts of water for 1 hour or 'til tender. Remove the bones and discard. Set the meat aside. Add water to the pot enough to make 3 1/2 quarts. Bring to a boil. Add tomatoes (If you chose, Mom didn't), celery, bouillon, and saffron. Bring to a simmer.
