Preheat the oven to 350 degrees F (175 degrees C). Line a roasting pan with enough aluminum foil to cover the whole bangus. Remove scales and gills from bangus. Wash the innards. Pat fish dry with a paper towel. Mix tomato, onion, and 1/3 of the ginger together in a bowl. Season with salt and pepper. Cut open the front side of the fish and fill.

Start to preheat the oven at 200 C to 400 F. While the oven is preheating, cover the oven tray with aluminum foil. Brush it with vegetable oil before putting the bangus to prevent sticking on the tray. Lastly, transfer the milkfish into the oven. Baked it for 30 to 40 minutes or until it looks cooked.

Bake the milkfish in the preheated oven for 30-40 minutes, or until the fish is cooked through. Let it stay for 3 hours. Cut the head and tail off the milkfish. Slice into serving pieces. Arrange in a baking tray lined with aluminum foil. Preheat the oven to 370F. Once the oven gets hot, bake the milkfish for 45 minutes or until the top turns light brown. Remove from the oven and transfer to a serving plate.
